Extra cheese please!! For all the cheese lovers… this is a fun recipe that is crispy, salty, and satisfying. Parmesan crisps are my favorite snacks. I love adding them to my salads instead of crackers.
Also, you can serve parmesan crisps with soups or any pasta dish. Plus, it makes an excellent party appetizer and looks elegant on a charcuterie board.
A lovely combination of tangy and sweet! This mouthwatering open face pie is easy to make. A flavorful mixture of blueberries, raspberries, and blackberries that will leave you and your guests satisfied. Enjoy!
I found this frozen gluten free pie shell at my local supermarket in the gluten-free isle. You can also find Wholly GlutenFree products at a health food store. Here is their website where you can purchase from them directly. Wholly GlutenFree products click here.
In a large saucepan, on medium heat, whisk together sugar, cornstarch, water, and butter until smooth.
Add 2 cups of mixed berries and stir gently for about 2 mins. on low heat. As soon as the berry filling becomes thick, turn off the heat, and let it cool.
Using a slotted spoon, gently scoop the berry filling into the pie shell. Leave any syrup sauce behind. The goal is not to make your pie filling watery. TIP: If you wish, you can store the berry syrup in a mason jar for up to 1 week. The syrup can used on pancakes or on top of ice-cream.
Place the pie onto a baking sheet pan. Bake for 25 mins. or until crust is golden brown. Remove from the oven and let it cool for about 15 mins.
Okay, I have to admit that I love baked parmesan pretzel chicken because it is healthy and the possibilities are endless! Add the chicken strips to a salad with croutons, and you have a healthy salad. You can serve it with pasta and tomato sauce, and you have a lovely Italian dish.
Also, you can serve the chicken strips along with your favorite dipping sauce and fries on the side.
For this dish, I used dairy-free parmesan cheese and gluten-free pretzels. But of course, you can use regular cheese and pretzels.
Here is a delicious, tangy and sweet recipe for all the shrimp lovers out there. Honey Lemon Shrimp with Garlic can be served with any rice dish, salad, grits, or artisan bread. I use white rice for this shrimp dish so the rich flavors can permeate the entire dish.
Wok this way. I have discovered a new way to make chicken fajitas and it’s super fast, easy, and fun. Ladies and Gentlemen, introducing the Wok! The wok is not just for Asian stir fry meals, you can make your favorite dishes as you would use a kitchen skillet. The bottom of the wok heats up to 700 degrees and locks in all the flavors…the food browns rapidly. Honestly, I don’t think I’ll ever go back to a skillet after cooking chicken fajita (stir-fry) in a wok. Plus, it’s a wonderful gluten-free meal.
The wok I have been using, Gold Dragon Heritage Edition is moderately priced and does the job. But do research which wok works best for you. Just remember that when you get a new wok you must ‘cure’ it with heat and oil before using it. You can find this exact wok here at this link.
Here is a video that shows you how to season your wok.
2tbspavocado oilNOTE: It's important to use oil that won't damage your wok. The oil has to have a high smoke point. Other oil options are sesame oil, grapeseed oil, or coconut oil. Research the best oil to use for your preference.
2chicken breast, sliced into strips Optional: You can use half a bag of frozen chicken strips to save time.
1red bell pepper, sliced into strips
1yellow onion, sliced into rings
salt and pepper
Almond Tortillas or Corn TortillasNOTE: I usually use gluten-free tortillas. You can use regular flour tortillas if you wish.
Fixings for Chicken Fajitas:
Shredded Cheddar CheeseNOTE: I use dairy-free cheese.
In a large bowl add the cut peppers, onions, and mushrooms.
In another bowl add the sliced chicken along with the garlic powder, onion powder, cumin, paprika, chili powder, salt and pepper.
Add avocado oil to your Wok and heat at a super high temp. about 4 mins.
Add onions, peppers, and mushrooms and stir fry for about 3 mins.
Add chicken strips along with the spices and stir fry for another 5-8 mins.
Shortcut:Use Mexican pre-mixed seasoning. About 1 tsp.My favorite is Frontier CO-OP – Mexican Fiesta Seasoning or Penzeys – Fajita Seasoning
Here are two of my favorite Mexican Seasonings that are already mixed and saves time. You can find my favorite Mexican Fiesta Seasoning here in this link.
You can find Penzeys Fajita Seasoning in the link below.
When I first moved to the South, I wanted to try Southern Green Beans and it was absolutely delicious! I decided to add crispy oven-baked prosciutto instead of bacon. It’s the perfect combination of rich flavors that will leave you craving for more.
The word prosciutto translates to “ham” in Italian. It’s 100% natural cured ham without any additives, preservatives, hormones, gluten or coloring agents. Prosciutto had been a popular dish in Italy for thousands of years. So, if you love bacon then you should try oven-baked prosciutto.
During the cold winter months, I have been craving shrimp and broccoli. I love the sweet and tangy flavors that would melt into your mouth. I recalled how easier it was to place a phone order from one of the local Chinese restaurants when I lived in New York City.
Please don’t get me wrong, I love living out here in a cabin in the woods. It’s that the restaurants out here are too far away, and they don’t deliver food.
I decided to create my version of shrimp and broccoli. With a little bit of experimentation, I found the right combination of simple ingredients. So far, I have been pleased with the results. This recipe is easy and brings back all the flavors of an elegant Chinese restaurant.
For the sauce: In a bowl whisk together soy sauce, chicken broth, white wine vinegar, ginger, garlic, brown sugar, and sweet chili sauce.
Heat olive oil in a large frying pan over medium heat. Add the chopped onions and cook until translucent.
Add the red peppers and broccoli. Stir for about 5 mins.
Remove the veggies and place in a bowl.
Add extra olive oil if needed. Add shrimps and stir for 10 mins.
Return the vegetables along with the shrimps.
Add and stir in the soy sauce mixture.
Serve immediately and garnish with sesame seeds, chopped peanuts, or scallions if desired.
Optional: Add mushrooms, snow peas, or water chestnuts if desired.
