Roasted Zucchini with Cheddar Cheese

Ingredients
  

  • 4 medium-size zucchini, cut about ½ inch slices
  • 2 tbsp olive oil
  • ¼ tsp thyme
  • 1 tsp garlic powder
  • cheddar cheese or dairy-free cheese (Note: I used dairy-free cheese).
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 425° degrees
  • In a medium-size bowl toss the zucchini slices with olive oil, thyme, garlic powder, salt, and pepper. 
  • Spread the zucchini on a baking sheet with foil underneath for easy cleaning. Add a little extra olive oil if desired. Be careful not to overlap the zucchini.
  • Sprinkle cheddar cheese on top of the zucchini.
  • Roast the zucchini for 10-13 mins. 
  • Remove from the oven and transfer to a serving plate.

Spicy Oven Roasted Corn on the Cob

Ingredients
  

  • 4 ears of corn on the cob
  • 2 tbsp Italian Seasoning
  • ¼ tbsp paprika
  • ½ tbsp chili powder
  • ½ cup unsalted butter or ghee
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400° F. Mix butter and spices in a bowl. Save half of the mixture and set aside.
  • Remove corn husk. In a sheet pan, spread the butter mixture over the corn in their individual foil.
  • After spreading the mixture fold foil around the corn.
  • Roast the corn for 40 mins.
  • After 40 mins. carefully spread the remaining butter mixture on the hot corn. Serve immediately.

Chicken with Peanut Sauce (Satay)

If you love peanut butter like myself then you’ll definitely love the tangy flavor of chicken with peanut sauce. Chicken Satay is a Southeast Asian dish of season chicken strips on a skewer with peanut sauce. This dish is easy prepare and will leave your satisfied and wanting more.

Chicken with Peanut Sauce (Satay)

Ingredients
  

  • ~ For the Peanut Sauce ~
  • 4 tbsp creamy peanut butter
  • 1 tbsp soy sauce
  • 1/2 lemon or lime, freshly squeezed
  • 2 tsp brown sugar
  • ½ tbsp fresh ginger, grated or ginger powder
  • ½ tbsp sweet chili sauce
  • ~ For the Chicken Marinade ~
  • 1 lb chicken breast
  • ¼ cup coconut milk
  • 2 tbsp soy sauce
  • 3 cloves of garlic minced or garlic powder
  • 1 tbsp fresh ginger, grated or ginger powder
  • 1 tbsp fish sauce
  • salt and pepper to taste

Instructions
 

  • ~ Prep for the Peanut Sauce ~
  • In a medium bowl, whisk together, lemon juice, brown sugar, ginger, soy sauce, sweet chili sauce, and peanut butter. Set aside in the fridge.
  • ~ Prep for the Chicken Marinade ~
  • Cut the chicken breast into strips about 1/4 thickness and season with salt and pepper. Flatten chicken with a mallet or a rolling pin.
  • In a zip lock bag add the chicken and marinade sauce. 
  • Place in the fridge for about 1 hour so the flavors can set in.
  • Drain the chicken form the marinade and discard the marinade.
  • Thread the chicken onto metal skewers and on a sheet pan lined with foil and a little bit of oil.
  • Heat oven to 375° degrees and place the chicken on the bottom rack.
  • Cook for 20-25 mins. And serve with the peanut sauce.

Ingredients
  

  • 1 tbs olive oil
  • 1/4 cup tomato sauce
  • 2 eggs
  • 1 chopped tomatoes
  • 1 tsp garlic cloves, minced or garlic powder
  • 1 tsp fresh basil, chopped
  • 2 tbs cheddar cheese or dairy free cheese
  • salt and pepper

Instructions
 

  • In a small/medium cooking pan add oil and tomato sauce, leaving an empty space in between the pan for the eggs.
  • Crack 2 eggs and season with garlic, oregano, salt, and pepper.
  • Bake eggs for about 15 mins.
  • Add cheddar cheese and fresh basil. Serve hot directly from the pan.
  • Optional: serve with toast or baguette 

Trail Camera- White Squirrel and a Buck

Super Easy Spaghetti Squash

So when I first started making spaghetti squash I had no idea how to start. How to slice open a spaghetti squash was a complete mystery to me…lol. I would look forward to eating spaghetti squash at a favorite restaurant at the time when I lived in Minneapolis, MN. The rich and butter flavor of spaghetti squash had me captivated.

I was determine to learn to make one for myself at home. After experiment different ways to prep spaghetti squash, I discovered a super easy way of making the process go faster. I used the magic of the microwave and learned that softening the squash was the best way to enjoy making this lovely side dish.

Super Easy Spaghetti Squash

Ingredients
  

  • 1 spaghetti squash
  • 2 tbs. olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400° F
  • Pierce spaghetti squash with fork a few times.
  • Place spaghetti squash in the microwave with a paper towel underneath or a microwavable plate for 5 mins. This helps soften the spaghetti squash and makes prepping easier.
  • Using oven gloves, transfer the spaghetti squash onto cutting board and let it cool for about 5-10 mins.
  • Cut the top of the stem off and slice the spaghetti squash lengthwise.
  • Scoop out the seeds and ribbing with a large spoon.
  • Drizzle the inside of spaghetti squash with olive oil and add salt and pepper.
  • Add olive oil to the baking sheet.
  • Place the spaghetti squash face down.
  • Roast spaghetti squash for 40 mins. or 50 mins. *The time will depend the size of the squash.
  • Remove from the oven and use oven gloves to flip the squash upwards.
  • Let it cool for a few mins. Then use a fork to gently scrape the strands from the spaghetti squash.

These potatoes are so yummy…it’s like love at first bite. They are a perfect weekend meal when you are busy getting other projects done. Plus, it pairs well with other main dishes. I promise you it’s a win-win.

Crispy Oven-Baked Garlic Fries

Cook Time 45 minutes

Ingredients
  

  • 1 tbsp garlic powder optional, 3 cloves of garlic, minced
  • 2 tbsp olive oil
  • 3 large baking potatoes
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp parsley

Instructions
 

  • Preheat oven to 450° degrees F
  • Cut the potatoes into ¼ sticks
  • In a large bowl soak the potatoes in cold water for 15 mins. and sprinkle salt. This helps with the crisping process because it helps remove the starch and adds extra flavor.
  • After 15 mins. drain the potatoes and pat dry with a paper towel.
  • Place the potatoes in a new bowl. Add olive oil, garlic powder, salt, and pepper. Mix well to distribute all the spices.
  • In a large baking sheet, add extra olive oil and spread the potatoes. Leave some space in between each potato so they can bake evenly. Place on the bottom rack of the oven.
  • Bake for 45 mins. or until golden crisp.
  • Add parsley and serve immediately.
    Optional: You can serve the potatoes with parmesan cheese or crumble blue cheese.

Winter Snowstorm in the Woods of South Carolina

Hello Friends,
I promised some pictures of the snowstorm from last week. I lost power and internet for two days. Trees are down because of the heavy weight of the snow. Overall, the beauty and serenity of the snow made up for the chaos.
