Kitchen Tips
Irish soda bread is wonderfully simple to make, but a few small tips can help you get the best texture and flavor every time you bake a loaf.
Don’t overmix the dough.
Soda bread dough should be mixed just until the ingredients come together. Overmixing can make the bread dense or tough. A light hand helps keep the loaf tender.
Shape the loaf gently.
Once your dough is mixed, shape it into a round loaf without pressing it too firmly. Irish soda bread is meant to be rustic and slightly imperfect—that’s part of its charm. *I used a small 5″ dia. cake pan to help keep the shape.
Score the top of the bread.
Traditional Irish soda bread is usually cut with a cross on the top before baking. This helps the bread bake evenly and gives it that classic farmhouse look.
Bake until golden.
A perfectly baked soda bread will have a beautiful golden crust. Almond flour gives it a slightly nutty flavor that feels very rustic. Brush the warm loaf with a tiny bit of salted butter or honey butter. *I added Splenda on top.
Let the bread cool slightly before slicing.
It can be tempting to cut into it right away, but letting the bread rest for 10–15 minutes helps the crumb set and makes slicing easier.
How to Store Irish Soda Bread
Because soda bread doesn’t contain yeast or preservatives, it’s best enjoyed fresh, but it can still keep well for a few days if stored properly.
At room temperature:
Wrap the bread in foil or store it in an airtight container. It will stay fresh for about 2–3 days on the counter.
In the refrigerator:
If you want it to last a little longer, store it in the fridge for up to 5 days. Just warm or toast slices before serving to bring back the texture. *This is my favorite storage method.
Freezing:
Irish soda bread freezes beautifully. Slice the loaf and place the slices in a freezer bag. It will keep for about 2 months. Simply toast or warm the slices when you’re ready to enjoy them.
